1 ½-2 ½ pounds cubed steak, in serving pieces. Aldi offers good ones in rounds, or take out your aggression on your own round steak.
¼ cup oil or ghee. I use peanut oil.
½ cup all-purpose flour (a little more if needed)
1 tsp. salt
¼-- ½ tsp. black pepper
1 large onion, sliced thin or diced
2-3 cups beef stock or broth (how much gravy do you need?)
1 tsp. Worcestershire sauce
1—1 ½ cups whole milk

INSTRUCTIONS

Preheat the oven to 400 degrees.
Put flour and salt and pepper into a bowl and stir it.
Put the oil into a heavy Dutch oven with a lid. Heat to just smoking.
Dredge the steak portions in the seasoned flour and brown them in the oil, not cooking through, but setting them aside. Add more oil if needed.
Deglaze the pot with the broth. Stir in the Worcestershire sauce. Stir in the milk.
Scatter half the onions in the pot.
Place the browned steak pieces evenly in the pot.
Top with the remainder of the onions.
Cover the Dutch oven and put it in the oven. Bake for 1 to 1 ½ hours.
Mashed potatoes are the perfect accompaniment; white rice is next.
Remove the steaks to a platter. Stir the gravy and adjust for thickness with more broth or milk. Add more salt and/or pepper to taste. Pour half the gravy over the steaks, reserving half in a gravy boat for the mashed potatoes or rice.

I never heard of baked steak until I came to West Virginia. Here all the home-style places offer it, even if they also make Country Fried Steak. Online, there are many recipes, no two alike, none exactly right. This is my own tested version after examining many prospects.

You can adjust heat and cooking time. 250 degrees for 3 hours, 350 degrees for 2 hours. 400 degrees for at least 1 hour.
