1¾ all purpose flour
2 tsp baking powder
½ tsp salt
1 tbsp white sugar
3 large eggs (brown or white ok)
5 tbsp oils (avocado or vegetable or any neutral)
1½ cup milk

Toppings:
Canned peaches
Syrup (aunt jamima for those who spent >10 years in Langford)
Whipping cream

Directions:

1. Heat waffle iron before mixing. Set oven to warm and put plates and small bowl of syrup in oven to warm.
2. In large bowl, whisk dry ingredients.
3. Form a well in the middle of dry ingredients and add eggs. Beat eggs with fork gently inside well. Add milk and oil and stir. Doesn’t need to be smooth - Lumpy is a-ok.
4. Pour or spoon into waffle iron.
5. Top with canned peaches, whipping cream, and syrup.
