5-6 cooked chicken breasts, cut into chunks (OR buy roasted shredded white meat chicken from Costco)

2 Tbsp olive oil
1 chopped onion
1 Tbsp curry powder
2/3 cup chicken broth
1 large teaspoon tomato paste
juice of 1/2 lemon
2 level Tablespoons sweet chutney (Branston pickle, a British product)
1 1/4 cups mayonnaise
3 Tablespoons heavy cream

You can now buy a big package of hand pulled rotisserie white meat at Costco.

Heat oil in a saucepan, add the chopped onion and fry gently until onion is translucent.
Stir in curry powder and cook, stirring for about 2 minutes. Stir in the broth, tomato paste, lemon juice and chutney. Stir until boiling, then cook for 5 minutes until mixture reduces and thickens.

Allow to cool and then stir in the mayonnaise and cream. The sauce should be of a coating consistency.

Add chicken and stir well.
