3/4 cup flour
1 1/2 cups panko
1/4 grated Parmesan cheese
1 tbsp ground mustard
2 large eggs
Kosher salt
Fresh ground pepper
4 skinless, boneless chicken breasts, sliced in half to form cutlets
Vegetable oil

Directions:
Directions:
Combine panko, Parmesan cheese, mustard, salt and pepper. Pour into shallow bowl. In a separate bowl add the flour, and in another bowl, beat the eggs.

Heat the vegetable oil over medium high heat until shimmering.

Dredge each cutlet in the flour, then the egg wash, and finally the panko mixture.

Add each cutlet to the oil and fry until the chicken is done and the crust is golden brown, approximately 4 minutes per side. Add more oil as needed.

Remove from the oil and allow to drain on a wire rack before serving.
