Zucchini

3 eggs
1 cup Crisco oil

Flour mixture:
3 sups all purpose flour
1 1/2 cups granulated sugar
1 tsp cinnamon
1 tsp salt
1 tsp baking powder
3/4 tsp baking soda
2 cups shredded zucchini, unpeeled
1 cup nuts, chopped
1 cup raisins

1 large or 2 small loaves

Mix together in large bowl 3 eggs and Crisco oil
In another large bowl, mix remaining ingredients
Stir bowl with eggs and oil with flour mixture until moistened
Pour into well greased pans
Bake 350º for 1 1/2 hours for 1 large pan OR 1 hour for 2 small pans (test with straw before removing)
Let cool in pans for a while before removing
