2 large baking potatoes, peeled and grated into a bowl of ice water
3 Tablespoons all-purpose flour
1 small, finely chopped white onion (optional)
1 egg, lightly fork whisked.
1 ¼ teaspoon salt
1/4 teaspoon black pepper, or to taste
3 Tablespoons clarified butter/ghee

1. Put the potatoes on a kitchen towel, roll it up, and squeeze moisture out over the sink..
2. Empty the potatoes into a mixing bowl. Add flour, onion, salt, pepper, and egg, and stir lightly.
3. Heat the ghee in a large skillet. Drop in the batter by large spoon-fuls, about 1/3 cup. Yield about 6
latkes.
4. Let brown to golden on one side, turn, brown on the other.
5. Plate and serve immediately with a spoonful of applesauce and/or sour cream.

Latkes are the traditional Hanukkah breakfast treat of eastern European Jews, though not reserved for that time. This recipe comes from Ina Garten, except that she does not mention onions. Many Latke recipes do. She also does not mention sour cream, but it is a traditional option.
