2 lbs Baby carrots
½ cup Butter
¼ cup Honey
¼ cup Brandy
¼ tsp Salt or to taste
¼ tsp Black pepper or to taste
1 tbsp Fresh, chopped parsley

Directions:
Directions:
In a large skillet, bring ½ inch of water to a boil. Add carrots, cover and cook until carrots are crisp-tender. Drain and set aside. In the same skillet, cook butter and honey over medium heat until butter is melted. Stir in the brandy and bring to a boil. Cook until the liquid is reduced to about ½ cup. Add the carrots, parsley and season with salt and pepper. Heat through and serve.
