Chicken-Apple Burgers Recipe

4 slices bacon
1/2 c finely chopped onion
1 T minced garlic
1/2 t black pepper
1/4 t salt
1/4 c apple brandy, apple juice or dry white wine (i used wine)
2/3 c finely chopped granny smith apple (1 med.)
2 T snipped fresh italian parsley
1 t snipped fresh sage
2 lb. uncooked ground chicken
1 c soft bread crumbs (I used 1/2 c gluten-free panko crumbs)

1. Cook bacon in a cast iron skillet (my preference) until crisp. Let bacon dry on paper towels, and drain all but 1 t fat from skillet. Add onion, garlic, pepper and salt to skillet. Cook about 3 minutes or until onion is tender, stirring occasionally. Carefully add apple brandy (or whatever). Simmer, uncovered, until nearly all the brandy (or whatever) evaporates. Remove from heat. Stir in bacon, chopped apple, parsley and sage; let cool.
2. In a large bowl, combine ground chicken, bread crumbs, and apple mixture. Divide mixture into 6 portions (I made 8). Shape each into a patty.
3. Grill chicken patties, covered, over medium heat 14-18 minutes or until done (165 degrees), turning once halfway through. Patties can also be cooked right in the cast iron skillet.
4. Serve on buns, or in lettuce wraps, or crumbled on salads, or whatever way you want.

These delicious little morsels are the perfect healthy go-to meal for lunch or dinner. I make a bunch and freeze them individually, then take them out of the freezer and run out the door when I'm late for work (way better than burger king). Everyone in the family likes them (rare indeed) and I never get tired of them. They are particularly delicious served on pretzel buns with whole-grain mustard, grilled apples slices, applewood-smoked bacon and/or cheese as toppers.

We discovered this recipe after picking way too many apples in 2019 with Audrey and Christian in Ellijay, and we were desperate to find any recipe that said "apple"!
