4 Medium russet baking potatoes
2 tbsp butter
milk
salt and pepper
2 tbsp sour cream
½ cup shredded cheddar cheese

Directions:
Directions:
Preheat oven to 425º. Scrub potatoes thoroughly and dry. Pierce potatoes 3-4 times with a fork. Bake for 40-60 min until potatoes are tender in center. Cut a lengthwise slice from top of each potatoes. Discard skin from slice. Reserving potatoes shells, scoop out the insides with a spoon and put in a bowl. Mash potato and add butter. Beat in enough milk to make stiff consistancy. Add sour cream and mix well. Season with salt and pepper to taste. Pile potato mixture back inside shells. Place in a 9x13" pan. Sprinkle with cheddar and return to oven for 20-25 min until lightly browned.
