6 sweet potatoes (4 pounds)
1/2 cup firmly packed light brown sugar
1/2 cup butter, melted
1/3 cup half-and-half
2 large eggs
1 teaspoon vanilla extract
1/2 cup firmly packed light brown sugar
2 Tablespoons all-purpose flour
1/4 cup cold butter, cut into pieces
32 coarsely crushed gingersnap cookies (optional)
nuts (optional)
mini marshmallows (optional)

Directions:
Directions:
Cook sweet potatoes in boiling water covered over medium heat for 30 minutes until tender. Cool; peel and mash (I use a hand mixer).
Combine mashed sweet potato, 1/2 cup brown sugar, and the next 4 ingredients in a mixing bowl; beat at medium speed with and electric mixer until smooth. Spoon into a greased 2 1/2 quart or 13X9" baking dish.
Topping options:
Combine 1/2 cup brown sugar and flour. Cut in 1/4 cup cold butter until crumbly. Stir in crushed gingersnaps. Sprinkle streusel over sweet potatoes. Bake uncovered at 350º for 25 minutes or until streusel is lightly browned

Combine the brown sugar, flour and butter. Add nuts to taste and sprinkle over sweet potatoes.

Bake the casserole. Remove from oven and sprinkle mini marshmallows on top. Place the casserole back in the oven under the broiler until marshmallows are toasted. Watch carefully. They will burn quickly.
