Turkey guts (sans liver)
Water
Onion
Carrot
Celery
1/4-1/3 C Flour
Spike

Directions:
After cleaning your turkey preparing it to roast, take the guts from inside and place in a sauce pan with water to cover and bring to a boil. Do not include the liver, as it will make the gravy very bitter. Reduce heat to simmer. Add chopped onions, carrots and celery to the boiling guts. Let simmer for a couple of hours. If the water runs low, add more hot water.

Once your turkey is done roasting, and you have removed the turkey from the roasting pan to carve, make the gravy in the roasting pan with all the browned turkey bits on the bottom. Place on the stove over super low heat so as not to burn your pan. Add the hot water from the simmered guts and loosen the brown bits on the bottom of the pan with a whisk. Mix the flour with approximately 1/4 to 1/3 cup of hot water in a cup with a whisk. You will have a thick roux. Slowly add that to your simmering browned bits in the pan with the whisk. Add your spices as desired, and let it continue to simmer, whisking often, until thickened.
