2 c cooking oil
4 c white sugar
2 tsp vanilla
8 eggs
4 c flour
4 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
2 tsp salt
4 c finely grated carrots

Directions:
Directions:
Combine oil, sugar, vanilla. Beat well. Add eggs, one at a time and beat after each egg until creamy. Sift dry ingredients together and add to first mixture. Fold in the finely grated carrots. Pour into large greased cake pan. (Add raisins, nuts and/or chips if desired,) Bake at 350ºF for 40-45 minutes.
