Directions:1. Whisk together flour, baking powder and salt in a small bowl ad set aside. (If using salted butter then omit the salt addition here.) 2. In a medium microwave-safe bowl melt the semi-sweet chocolate chips and butter in 30 second increments. Stir and repeat until chocolate is melted. Let cool slightly. 3. Beat sugar and eggs at medium high until thick and pale yellow, about 2-3 minutes. Add chocolate mixture and beat on medium-low until well incorporated. Add vanilla and beat until incorporated. 4. Fold in remainder of the chocolate chips and add chopped nuts if desired. 5. Refrigerate for 30 minutes or until batter is firm enough to scoop. 6. Preheat oven to 350º F. 7. Drop by heaping tablespoons onto sil-pat (or parchment paper) lined baking sheets, leaving 2 inches between cookies as they will spread when baked. 8. Bake for 15-16 minutes or until edges of cookies are crisp. Let cookies cool for 2-3 minutes before transferring to cooling rack. 9. Let baking sheets cool before repeating. |

Notes: These cookies are OMG good! Store in air-tight containers although they won't last very long! They also get hard after a few days. Freeze instead. You can also sprinkle a little sea salt on the cookies before baking. Or sprinkle a little confectioners sugar on the cookies after baking. Walnuts or almonds or even macadamia nuts could be added as well. Experiment!
