1 lb. Chicken breast, boneless skinless
2 Tbsp. Butter
2 lg. Garlic cloves, minced
8 oz. Penne pasta, dry
2 c. Chicken broth
1/2 c. Heavy cream
1/2 c. Milk
3 oz. Cream cheese
1/3 c . Basil pesto
1/4 c. Parmesan cheese, grated
1/8 tsp. Crushed red pepper flakes
3 c. Fresh baby spinach
1/3 c. Sun dried tomatoes, chopped
Directions:
Directions:
Cut fresh chicken or left over rotissary chicken into bite size pieces then brown over med high heat in a deep skillit with the butter. Remove the chicken. Add garlic, hot pepper flakes, and a touch more butter sautaeing for about 1/2 minute. Add broth and pasta then bring to a boil. Reduce heat, cover and simmer for about 8 minutes stirring every few minutes until liquid is almost gone and pasta is tender. Add milk, cream, cream cheese and pesto. Simmer, stirring constantly until cream cheese is completely melted. Add chicken, Parmesan cheese, spinach leaves, and sun dried tomatoes. Stir until spinach is wilted. To serve, top pasta with freshly cracked pepper and a sprinkle of ground red pepper.
