Ingredients:

2 cans Chicken Broth
2-1/2 skillets of Cornbread
4 slices Wheat Bread
3 Boiled Eggs
4 stalks Celery - chopped finely
1 Onion -chopped finely
1-2 cans Cream of Chicken Soup
1/2 Soup Can Water
1 tsp salt
1/2 tsp Pepper
1/2 tsp Sage
1/2 tsp Poultry Seasoning
2 T Butter
3-4 Chicken Thighs, boiled and de-boned

Directions:
Directions:
Saute chopped onions and celery in 2T butter and 1 can chicken broth until soft (adding broth gradually).
Crumble cornbread in bowl and add 4 slices wheat bread (torn in pieces).
Add chopped eggs, salt, pepper, sage & poultry seasoning.
Add soup, chicken, chicken broth, celery & onions with chicken broth.
Stir all together and add water if consistency needs more moisture.
Bake covered in 350º oven until heated through. Uncover and brown.
 

Giblet Gravy

1 Egg, boiled
Giblets or small pieces of chicken
2 T Butter
Chicken Stock
2 T Flour
Salt & Pepper to taste
Poultry Seasoning

Directions:
Directions:
Boil egg and chop the giblets.
In a saucepan, melt butter and add flour.
Stir and gradually add chicken stock to desired consistency.
Add chopped egg and giblets and continue to cook on low-med heat.
Add more stock and stir until thickened to desired consistency.
Season.
