1½ lbs. smoked pork
1 Small onion halved
2 large carrots in pieces
2 celery stalks in pieces
2 sprigs of parsley
6 cups water
⅔ cup barley
Salt and pepper to taste

Directions:
Directions:
Combine all ingredients except barley in pot and bring to a boil; reduce heat and simmer for 30 minutes. Add barley and cook over low heat another 40 minutes, or until barley is tender. Remove pork and parsley sprigs from soup. Dice pork and return to soup.
