1/2 tsp. Salt
1/4 tsp. Black pepper
3 cloves garlic minced
1/4 tsp cayenne
1/2 c butter
1/2 c. Chopped green onions, including tops
2 1/2 lbs. mushrooms, washed and sliced
3/4 c. flour
2 c. Chicken broth
1 1/2 c. Whole milk
1/4 c chopped fresh parsley

Combine salt, pepper, garlic, and cayenne. Set aside
In 5-qt Dutch oven over medium heat, melt butter and add green onions, Sauté 3 minutes; add mushrooms. Cook 15-20 minutes or until mushrooms are soft. Add spice mixture and flour; stir to evenly coat mushrooms. Add chicken broth and milk. Stir until blended. Cover and simmer 50-20 minutes or until soup thickens and bubbles. Add chopped parsley just before serving.
