8 pork chops (good quality)
Flour
Salt & pepper
4 tbsp. Crisco Shortening (blue can)
garlic powder & onion powder
4 cups cooked rice
Cayenne powder, optional


Directions:
Directions:
Heat 2 tbsp. Of Crisco in electric skillet. While heating, mix flour salt & Pepper together on waxed paper on counter. Dredge pork chops in flour mixture and fry chops in batches, adding more crisco if needed. When finished cooking chops, scrap the bottom of skillet, leaving all bits and seasonings in pan. Add1-2 tbsp. oil and fry the rice. Season with garlic and onion powder and additional black pepper to taste. Use cayenne if wanting a little spice. (I keep the pork chops warm in the oven while frying the rice.) Heap the rice on top of the chops and serve.
