Peach Cobbler Recipe

12 Ripe Peaches
2½ c. water
½ c. sugar ( a bit more if tart peaches)
Pinch of salt
½ c.flour
3 tsp. baking powder,
½ tsp of salt
2 T. sugar
⅓ c. shortening
1 egg
Milk

Cream Sauce
⅓ cup of butter
1 c. confectioners' sugar
⅛ tsp. of grated nutmeg
½ tsp. lemon extract
1 egg, well beaten
½ c. cream, whipped until stiff

Directions:
Directions:
Peel peaches and cut in thin slices. Put in a saucepan with water and sugar and pinch of salt. cover and cook gently for 10 minutes.

Meanwhile, mix and sift flour with baking powder, salt and sugar. Cut in shortening. When thoroughly blended add one well beaten egg and enough milk to make a very thickbatter.

Spread this over the peaches in the saucepan. Place in a hot oven and bake 35 minutes or cover closely and cook slowly for 25 minutes on top of stove.

In either case, when done, turn upside down on a deep platter and serve hot with cream sauce made as follows:

Work together to a soft cream; butter, conectioners' sugar. Ad nutmeg, lemon extract and well beaten egg. Stir the mixture over hot water until it i thoroughly heated and begins to steam at the edges.
Remove at once from the fire and fold in the whipped cream.
