1 cup uncooked quinoa
2 cups water or broth

2 roma tomatoes diced
1 ripe avocado diced
1-15 oz can black beans rinsed and drained
1-12 oz can corn drained
1 bell pepper diced
1/4 cup green onion diced
1 jalapeno pepper seeded and diced
1/3 cup cilantro chopped

Dressing
1/4 cup vegetable oil
1 1/2 tablespoon lime juice
1 teaspoon sugar
1 teaspoon cumin
1/4 teaspoon garlic powder
1/2 tablespoon red wine vinegar
1/8 teaspoon salt
1/4 teaspoon pepper

Directions:
Directions:
1. Cook quinoa according to package directions and allow to cool.
2. Combine quinoa, tomatoes, avocado, black beans, corn, bell pepper, green onion, jalapeno and
cilantro in a large bowl.
3. In a small bowl, combine all dressing ingredients and mix well. Pour over vegetables and toss to
coat. Add quinoa and combine.
4. Refrigerate until ready to serve
