2 T plus 1 t. peanut oil divided
1 T curry powder
2 medium onions, sliced (about 4 cups)
2 t. minced garlic
2 large sweet potatoes, peeled and cut into chunks
2 cups chicken broth
1 28 ounce can whole tomatoes, drained and quartered
1 # ground chicken or turkey
1 t. salt divided
1/4 t. black pepper
1/4 t. cayenne pepper
1/2 cup chunky peanut butter
1/2 cup coconut milk

Directions:

Heat 2 T of peanut oil in a large dutch oven or stockpot over medium-high heat.
Add the curry powder an cook stirring for about 1 minute. Add onions and cook, stirring occasionally for about 2 minutes. Add the garlic and cook for about 1 minute. Stir in the sweet potatoes, chicken broth and tomatoes and bring soup to a boil. Cover and simmer 20-30 minutes

In a large skillet, heat the remaining t. of peanut oil Add the ground chicken or turkey and cook, stirring with a wooden spoon to break up any clumps until cooked through. Season with 1/2 t. of the salyt and 1/4 t. black pepper. Drain on paper towels.
Add the cooked meat, the remaining salt, cayenne, peanut butter an coconut milk to the soup, stirring to combine. Bring mixture to a simmer and cook for 20 minutes
Use your imersion blender to blend the soup so it is fairly smooth

This was first served to me by The Twins who used to decorate their home and serve meals at Halloween & Christmas. People would come enjoy their hospitality, dinner and view the beautiful decorations that had on 3 floors of their home up in Happy Valley They donated thousands of dollars over 7-8 years fixing and hosting nightly for a month before Halloween and 2 weeks before Christmas. Helped children, sponsored breakfast and lunch programs at various grade schools, purchased back packs, helped Cancer patients, etc. Amazing ladies
