3/4 cup golden Crisco shortening

1 cup granulated sugar
Two eggs
1 teaspoon vanilla
2 1/4 cups all purpose flour 1 1/2 teaspoon baking powder
1/4 teaspoon salt

Filling and frosting ingredients
1/2 cup raspberry jam
1 1/2 cup icing sugar
1/4 teaspoon almond extract
1 1/2 tablespoons hot water
More if needed
Candied cherries to decorate

º350 pre heat oven
Cream shortening, sugar ,eggs and vanilla in a large bowl on medium speed until light and creamy. Combine flour, baking powder and salt in a bowl. Add to creamed mixture beating at low speed until well blended. If desired chill one hour for easy rolling. Roll out dough, a portion at a time to 1/8 thickness.
Cut out cookies with a round cookie cutter. Bake at 350 for 12-15 minutes, or until lightly browned around edges. Cool completely.
Put raspberry jam on half of the cookies. Top with another cookie. Add glaze on top, and a half cherry.
