2 Cups Graham Cracker Crumbs
1 Cup Finely Chopped Pecans
3 Tbsp. White Sugar
1 Tbsp Ground Cinnamon
½ Cup Unsalted Butter, melted
3 (8oz) Packages of Cream Cheese, softened
¾ Cup White Sugar
3 Eggs
¾ Tsp. liquid vanilla powder
4 Cups Honeycrisp Apples (peeled, cored, and thinly sliced)
⅓ Cup White Sugar
½ Tsp. Ground Cinnamon
¼ Cup Chopped Pecan

1. Preheat oven to 350ºF
2. In a large bowl, stir together the graham cracker crumbs, 1/2 cup finely chopped pecans, 3 tablespoons sugar, 1/2 teaspoon cinnamon and melted butter;
3. Press into the bottom of a 9 inch springform pan
4. Bake in preheated oven for 10 minutes
5. In a large bowl, combine cream cheese and 1/2 cup sugar
6. Mix at medium speed until smooth
7. Beat in eggs one at a time, mixing well after each addition
8. Blend in vanilla; pour filling into the baked crust
9. In a small bowl, stir together 1/3 cup sugar and 1/2 teaspoon cinnamon
10. Toss the cinnamon-sugar with the apples to coat
11. Spoon apple mixture over cream cheese layer
12. Sprinkle with 1/4 cup chopped pecans (Optional)
13. Bake in preheated oven for 60 to 70 minutes
14. With a knife, loosen cake from rim of pan
15. Let cool, then remove the rim of pan
16. Chill cake before serving
