2-3 Lb Split Peas
Water to cover
1 stalk Celery, diced
1 Onion, Diced
2-3 Carrots, diced
Ham Bone or Scraps of Ham (½ lb of meat)

Directions:
Directions:
Cover peas with water and soak overnight. Drain then cover again with water in small stock pot. Add celery, onions, carrots ham and boil until peas are tender (2-3 hours). If using ham bone, after cooking, remove meat from the bone in small pieces and discard the bone. Adjust thickness of soup with water per your preference. Season to taste. This soup is best if made several days ahead. Add water if soup thickens too much.
