1 med Onion
1 clove Garlic
˝ tsp Salt
1 tbsp Bacon Drippings
1 can Stewed Tomatoes (8 ˝ oz)
˝ cup Chicken Broth
˝ tsp Chili Pwd
⅛ tsp Cumin
1 cup Uncooked rice

Directions:
Directions:
Cut onion in half-chop half the onion and grate the other half. Finely chop the garlic, place in small bowl, add salt and mash with the back of a spoon, making a paste. Heat bacon drippings in a large saucepan, add onion and garlic paste and sauté until diced onions are soft. Add stewed tomatoes, chicken broth and seasonings and bring to a boil. Stir in rice, cover and cook over very low heat for 15 to 20 minutes.
