1 stick margarine
1/2 c shortening
2 c sugar
5 eggs
2 c flour
1 tsp baking soda
1 c buttermilk
1 tsp vanilla
1 c coconut
1 c pecans

Directions:
Directions:
Preheat oven to 350. Grease and flour 3 9-in pans. Cream margarine, shortening, and sugar. Add egg yolks. Sift flour and baking soda. Add to mixture alternately with buttermilk and vanilla. Stir in pecans and coconut. Fold in beaten egg whites. Line three 9-in cake pans with waxed paper and then grease and flour. Pour batter into prepared pans. Bake for 20-25 minutes. Frost with Cream Cheese icing.

8 oz cream cheese, softened
1 stick margarine, softened
4 c powdered sugar
1 tsp vanilla

combine all ingredients and mix at high speed for 5 minutes.
