¾ lb Blue potatoes
¾ lb Red potatoes
½ cup Yukon gold potatoes
1 sm Red onion
2 Beefsteak tomatoes
⅔ cup Hellmann’s Mayonnaise
3 tbsp Dijon mustard
3 tbsp Cider vinegar
3 tbsp Sweet-pickle relish
Salt and pepper to taste

Directions:
Dice potatoes with skins on into 1 inch cubes. Place diced potatoes in a medium saucepan and cover with cold water. Bring to a boil, then lower heat and simmer potatoes about 15 minutes until tender. Drain and cool. Dice red onion ¼ inch thick. Cut beefsteak tomatoes into 1-inch cubes. Set aside. In a mixing bowl, combine mayonnaise, Dijon mustard and cider vinegar until smooth. Add cooked potatoes, tomatoes, red onion and sweet-pickle relish. Season to taste with salt and pepper.
