5 lb Red Potatoes
3-4 Hard Boiled Eggs-chopped
½ cup Sweet pickle relish
3 cups Hellmann’s Mayo (approx)
¼ Yellow Onion-grated
Dash Mustard
Salt & Pepper to taste

Directions:
Directions:
Boil, peel and dice potatoes then place in large mixing bowl. You may leave skins on potatoes if you prefer. Allow potatoes to cool then add grated eggs, grated onion, pickle relish, and mustard and mix. Add mayo, a cup at a time until proper consistency is achieved. (Some people like dry potato salad, others prefer moist and creamy. Adjust seasoning as needed. If you prefer, a small amount of sugar can be added to the mixture.
