First Layer:
2 pkg Lemon-flavored gelatin
1 No. 2 can crushed pineapple, drained

2nd layer:
1 cup Whipping cream, whipped, or Cool Whip
1 pkg Cream Cheese (8 oz)
1 tbsp Powdered sugar

3rd layer:
1 cup Pineapple Juice
1 tbsp Lemon Juice
¾ cup Sugar
2 tbsp Flour
3 Egg yolks, beaten
½ cup Shredded cheddar cheese

Directions:
Directions:
1st Layer:

Prepare gelatin according to directions, add green food coloring to desired spring green and pour into 9x13 glass dish. Add drained pineapple, refrigerate until set.

2nd Layer:

Whip cream, sweeten with sugar. Whip cheese and add to whipped cream. Spread over top of pineapple-gelatin mixture.

3rd Layer:

Mix all, except shredded cheese. Cook until thick, cool. When cool spread over whipped cream and cheese layer. Garnish with shredded cheese.
