4 cups small Broccoli florets, blanched
1 cup Raisins
1 cup Sliced Mushrooms
¼ cup Chopped Red Onion
6 Slices Bacon, crisp and crumbled

To assemble, place all salad ingredients in a large bowl, pour dressing over the salad, toss and adjust with salt and pepper, if needed.
 

Dressing

1 Egg
1 Egg Yolk
½ cup Sugar
½ tsp Dry mustard
1 ½ tsp Corn Starch
¼ cup White Vinegar
¼ tsp Salt
2 tbsp Unsalted Butter (cut into bits and softened)
½ cup Mayonnaise

Directions:
Directions:
In a small bowl whisk together the whole egg, egg yolk, sugar, mustard and corn starch. In a saucepan, combine the vinegar, 1/4c water and salt and bring to a boil. Whisk in the egg mixture and cook whisking for 1 minute or until thickened. (Before adding the egg mixture to the hot liquid, whisk a tablespoon of the hot liquid into the egg mixture to temper the eggs-if you don’t the egg mixture will scramble.) Remove from heat and whisk in the butter, a pat at a time, then whisk in the mayonnaise and chill covered.
