2 - 2.5 oz. pkgs chopped smoked beef
1 - 8 oz. pkg cream cheese (softened)
1/3 medium red onion
1 Tbsp horseradish sauce
chopped pecans (enough to cover the ball when rolled in them)

Directions:
Chop beef and onions as finely as possible.
Add horseradish sauce. Mix all thoroughly with the cream cheese. To mix well squeeze the cheese mixture in your fingers until all ingredients are consistent throughout. Roll into a ball and roll the ball in the chopped pecans.

This appetizer is best if prepared 24 hours before serving to give the flavors time to blend and to chill the cream cheese.
