1 medium onion
3 tablespoons white wine vinegar
¼ cup lime juice
6 cloves garlic
1 cup beef broth
4 teaspoons ground cumin
1 tablespoon dried oregano
1 tablespoon tomato paste
2 ½ pounds chuck or round bottom roast (trimmed of excess fat)
salt and pepper
1 tablespoon oil
2 bay leaves

1. Add the onion, vinegar, lime juice, garlic, beef broth, cumin, oregano, cloves, and tomato paste to a blender and blend until smooth
2. Cut the beef into 3-4 large pieces.
3. Season the meat with salt and pepper on all sides.
4. Heat ½ the oil in the pressure cooker and brown the meat on all sides.
5. Once meat is browned, add the blended sauce and bay leaves.
6. Cover the pressure cook and let cook at pressure for 65 minutes.
7. Allow the pressure to release naturally, then remove lid.
8. Discard the bay leaves and shred the beef in the juice. Once shredded, allow to soak up the juice for another 10 minutes.

I have removed the chipotle peppers from the recipe to accommodate younger palettes, the recipe calls for 2-4 peppers.
