1 c butter
2 c sugar
5 eggs
2 c four
1 tsp baking soda
1 c buttermilk
1 tsp vanilla

Directions:
Directions:
Cream butter and sugar until smooth. Separate egg yolks and whites. Add egg yolks one at a time to cream mixture. Sift flour and baking soda together. Add alternately with buttermilk, ending with buttermilk. Add vanilla. Beat egg whites stiff and fold into other mixture. Pour into 3 greased and floured cake pans. Bake at 350 for 30-45 minutes
 

Icing


Ingredients:

1 stick butter
1 8 oz cream cheese (room temperature)
1 tsp vanilla
1 box powdered sugar
1 c coconut

Directions:
Directions:
Cream the butter and cream cheese. Add vanilla and sugar. Mix until smooth. Fold in coconut. Spread on top of each cake layer and then stack the cake layers on top of each other.
