1 rotisserie chicken, chopped & shredded
1 medium onion, chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 package chicken chili seasoning
2 cans (14 ounces each) chicken broth
1 can (4 ounces) Rotel; tomatoes/green chilies (mild or hot)
2 teaspoons ground cumin
2 teaspoons dried oregano
1-1/2 teaspoons cayenne pepper
1-1/2 teaspoons oregano
5 cans (14-1/2 ounces each) great northern beans, drained, divided
1 cup shredded Monterey Jack cheese
Sliced jalapeno pepper, optional
Sliced avocado, optional
Sour cream, optional

Directions:
Directions:
1. In a large pot over medium heat add onion, olive oil, and garlic until lightly browned. Stir in the broth, rotel, cumin, oregano
and cayenne; bring to a boil.

2. Reduce heat to low. Add beans, seasoning, and oregano; simmer for 20-30 minutes. Stir occasionally.

3. Add chopped/shredded rotisserie chicken; simmer for 20-30 minutes. Stir occasionally. Add 1⁄2 cup cheese and stir.

4. Top each serving with cheese and, if desired, sour cream, jalapeno pepper and avocado slices.
