5 c rhubarb, cut in ½ inch pieces
1¾ c sugar
1 T flour
¼ t salt
1½ t grated orange rind
Sections of one orange, cubed
4 c soft small bread cubes
½ c melted butter or margarine
½ c flaked coconut

Directions:
Directions:
Mix together rhubarb, sugar, flour, salt, ¾ t of the orange rind and fruit, ½ of bread crumbs and ½ of butter mix. Melt butter in pan. Add bread crumbs, coconut, orange, and rind.

Put into greased 8 x 8 x 2 inch baking pan. Sprinkle rest of butter mix and rest of bread crumbs on top of rhubarb. Bake at 375 degrees about 40 minutes or until brown. Serve warm.
