2 lbs of flank steak, thinly sliced, and cut into 3 x 6 inch strips
Spicy dark mustard
2 T butter or oil
¼ c red wine
2 c water
2 T flour
½ c water
2 medium onions, sliced
Salt and pepper
Dill pickles, cut into wedges
6 bacon slices, cooked just enough to render the fat
Toothpicks to keep the rolls closed

Lay meat on a board and sprinkle lightly with salt and pepper. Spread with a light coating of spicy mustard. Lay a half strip of bacon lengthwise on each strip of meat. Then place a dill pickle wedge on each strip crosswise near one end of the meat. Roll the meat into rolls starting at the pickle end. Add toothpicks to hold meat together.

In an electric skillet sauté onions in butter and then brown meat rolls in the skillet. After browned, add red wine to the skillet to deglaze it. Then add 2 c of water to cover. Simmer for 1 to 1½ hours. When finished cooking, remove Rouladen and put into a bowl. Carefully remove toothpicks so that rolls don't fall apart. Mix about 2 T of flour with ½ c of water. Mix this into the skillet juices, cooking until thickened. Add salt and pepper to taste. Pour gravy over Rouladen. Plan on two to three pieces per person.
