5 to 7 lb Boneless Pork Roast
2 or 3 Garlic Cloves or
2 tbsp Granulated Garlic
2 tsp Beau Monde Seasoning
4 tsp Ground black Pepper
4 tsp Seasoning Salt
¼ cup Honey
¾ cup Coke

Rub outside of roast with cut garlic cloves (if using fresh garlic). If not, mix Granulated Garlic, Beau Monde Seasoning, Black Pepper and Seasoning Salt together and rub entire roast with mixture. Rub in well. If roast is small, cut in half and tie two halves together. If available, cook using a spit. If not, may be grilled in smoker or covered grill over indirect heat. If you cook entire loin without tying together, cooking time will need to be reduced by ½ to ¾ of an hour. Cook over low to moderate heat (200º to 225º for 2 to 2 ½ hours. Meat thermometer should register 160º.

During the last hour of cooking, baste roast with honey/coke mixture. every 15 minutes.
