1 lb ground pork sausage
2 tsp canola oil
5 T butter
1/4 c all-purpose flour
3 c milk
3/4 tsp salt
1/2 tsp pepper
8 refrigerated jumbo biscuits
1/4 c chopped green onions
3/4 c shredded sharp cheddar cheese

Preheat oven to 350º.
1. Cook sausage and oil in a large skillet over medium-high heat 8 minutes or until crumbly and no longer pink. Remove from skillet and drain.
2. Melt butter in skillet; whisk in flour. Whisk constantly 1 minute.
3. Gradually whisk in milk, salt, and pepper. Brink to a boil, whisking constantly; cook 2 minutes. Stir in sausage.
4. Grease an 11x7 baking dish with cooking spray; place on a baking sheet.
5. Split biscuits in half lengthwise. Place 8 halves in baking dish. Top with half of sausage mixture and green onions. Repeat layers.
6. Sprinkle with shredded cheese. Bake 40 minutes.
