1/4 c butter or margarine
1 6oz package ready to serve frozen crabmeat, thawed and drained
2 T sliced green onions
8 lg eggs, lightly beaten
1/2 c sour cream
2T grated Parmesan Cheese
1/2 tsp salt
1/4 tsp pepper
3 English muffins, split, toasted and buttered

Directions:
Directions:
1. Melt butter in a large skillet; add crabmeat and green onions. Cook over medium-high heat, stirring constantly, until onions are tender; set crabmeat mixture aside.
2. Combine eggs and next 4 ingredients. Add to crabmeat mixture.
3. Cook without stirring, until mixture begins to set on bottom. Draw a spatula across bottom of pan to form large curds. Continue cooking until eggs are thickened but still moist. Do not stir constantly.

Serve immediately over muffin halves.
