1 C butter or margarine, softened
1 C granulated sugar
1 C brown sugar, packed
2 eggs
1 T orange zest, grated (Use fresh)
1 T lemon zest, grated (Use fresh)
1 tsp vanilla extract
2 C all-purpose flour
1½ C quick-cooking oats
1 tsp baking soda
1 tsp salt
1 C walnuts, chopped
1 C raisins
1 C dates, pitted and chopped
1 C coconut, flaked

Directions:
Directions:
Preheat oven to 375ºF. Cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Add in orange and lemon zest and vanilla. In a separate bowl, combine flour, oats, baking soda and salt. Mix. Gradually add the dry ingredients into butter-sugar mixture.. Combine well. Stir in remaining ingredients. Drop onto ungreased cookie sheets (parchment paper makes for easy clean-up). Bake for 8 minutes. Leave on cookie sheet for 3-5 minutes, then transfer cookies to a wire cooling rack.

Cookies continue to cook after removing from oven. Cookies will be soft when taken out. Use a metal turner to remove from the pan.
