Coffee Cake

2 bx Blueberry Muffin Mix*
2 Eggs
2 cup Water
6 tbsp Vegetable Oil

* Use Betty Crocker Wild Blueberry Muffin and quick bread mix with blueberries.

Directions:
Directions:
Mix together muffin mix, eggs, water and vegetable oil. Pour 1/2 the mixture in a 9x13 baking dish. Meanwhile, drain and rinse blueberries and spread over batter mix. Spoon the rest of the muffin mix over blueberries. Sprinkle crumbled topping over batter and bake for 30 minutes at 300º. Remove from oven, allow to cool then ice the cake.

2 tbsp Cold butter
1/2 cup Sugar
4 tbsp Flour

Directions:

Mix together, cutting in butter 1 pat at a time until topping is crumbly.
 

Icing

1 cup Powdered Sugar
2 tbsp Melted butter
2 tbsp Lemon juice

Thoroughly mix together until smooth.
