Belive it or not this is a Weight Watchers Recipe but it's so good you'll never notice.

1 (3/4 lb.) pork tenderloin
2 (15 oz.) can black eye peas, un-drained
1 (14 oz.) can fat-free beef broth
1 (16 oz) package frozen veggie and gumbo mix
(found in the frozen food section - it has okra, corn, etc.)
1 tablespoon dried parsley flakes
2 teaspoons hot sauce
½ teaspoon dried thyme
½ teaspoon ground red pepper
2 cloves of garlic minced
2 bay leaves
2 ½ cups long grain rice

Cut up pork tenderloin and brown in skillet. Gradually stir in rest of all ingredients. Simmer with bay leaves for 10 -15 minutes then discard. Serve gumbo over cooked rice.
