3 c. diced fresh or frozen rhubarb, thawed
1 c. water
½ c. sugar
1 - 3 oz. pkg. cook-and-serve vanilla pudding mix
Vanilla ice cream, optional
Directions:
Directions:
In a microwave-safe bowl, combine the rhubarb, water and sugar. Microwave, uncovered, on high for 8-10 minutes or until rhubarb is tender, stirring occasionally. Stir in pudding mix until blended; cook for 1-2 minutes or until thickened, stirring occasionally. Serve over vanilla ice cream if desired.

Note: This recipe was tested in an 850-watt microwave.
