2 lbs Russet Potatoes
⅔ Stick of Butter
¼ Cup of Milk
Flour

Flat surfaced griddle that can reach 500º
Lefse turning stick
Pastry board and cloth
Corrugated rolling pin

Directions:
Directions:
Peel, half and boil potatoes until they are softened slightly. Do not overcook.
Remove water and add butter and milk to pot.
Mash potatoes until they are smooth.
Let cool outside refrigerator until room temperature.
Store in refrigerator overnight.

Heat griddle to about 450º (adjust as needed).
Mix with flour until not sticky (should feel like bread dough but a little dryer).
Roll out mixture to size and thickness of a tortilla.
Slide stick under the middle of lefse, lift and roll out on the griddle.
Fry on griddle until browned slightly on both sides.
Remove with stick, stack and cover with cloth.
