Baked Holiday Turkey Recipe

Thaw pre-cooked turkey, heat pre-cooked turkey
Thaw unopened in fridge breast side up on a tray
Pre-heat Oven to 450, turn down to 350 once turkey in.

Pre-Cooked
8-10 lbs 3 days defrost in fridge, bake 45 min-1.5 hrs @ 350 degrees
10-14 lbs 3-4 days defrost in fridge, bake 1-1.5 hrs
14-18 lbs 4-5 days defrost in fridge, bake 1.5-2 hrs


Cooking times are longer for an uncooked turkey. Times above are for a turkey that is pre-cooked and only needs to be warmed up.

Uncooked turkey
Cook 10 minutes for each pound

Remove from wrapper
Do not stuff turkey- not safe.
Place turkey breast side up on flat roasting rack in 2 inch pan. Do not add water to pan.
Brush skin with seasonings and vegetable oil.
Cook as described above.
Meat should reach 130-140 degrees inside. Check with meat thermometer . Place thermometer tip in thigh not a drumstick. Do not touch bone. Tip should point towards body cavity.

Carving
Remove drumsticks. Cut entire leg by holding leg and cut through joint. Remove by pulling leg out and back, using point of knife to disjoint it.
Insert fork into wing to steady turkey. Make long horizontal (up and down) cut above wing joint through to body frame.
Beginning halfway up breast, cut thin slice. When knife reaches horizontal cut slice will fall free. Continue cutting, starting at higher point each time.

Leftovers
Cool leftovers within 2 hrs. Small pieces to speed cooling.
Use leftovers within 1 week.
