3 TBL butter
1 shallot, finely chopped
1 clove garlic, chopped
2 TBL all-purpose flour
1 C heavy whipping cream
1 (10-ounce) box frozen chopped spinach, thawed, drained and squeezed dry
1 (8-ounce) jar artichoke hearts, drained and chopped
1 (10-ounce) can diced tomatoes with green chilies (ie: Rotel)
1 C shredded 4 cheese blend
Tortilla chips or veggies for serving

Directions:
Directions:
Melt butter. Add the shalot and garlic and saute until softened.

Add flour and cook until light blonde color.

Slowly stir in heavy cream, drained spinach and simmer until thickened, about 5 minutes.

Stir in artichoke hearts, tomatoes and cheese and cook until cheese melted. Remove to serving bowl.
