6 cups shredded unpeeled zucchini
1/2 teaspoon salt
3 eggs
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 pound ground beef
1 medium onion chopped
1 8 ounce can tomato sauce
1/2 teaspoon garlic powder
1/2 teaspoon oregano
1/2 teaspoon basil
1 cup chopped green pepper
1/2 cup chopped red pepper
1 medium onion chopped
4 ounce can mushroom pieces, drained

Directions:
Place shredded zucchini in colander. Sprinkle with salt and mix. Let stand 10-15 minutes. Drain well by pressing moisture out. In a large bowl, combine zucchini and eggs. Add 1/2 cup cheddar and mozzarella cheeses. Add Parmesan cheese. Spread in a greased 9x13 pan. Bake about 20-25 minutes or until set at 400º.
In a skillet brown ground beef with first onion and drain. Stir in tomato sauce and spices. Cook until mixture comes to a boil 2-3 minutes.
Spoon over zucchini crust. Top with remaining cheeses. Sprinkle peppers, onions and mushrooms over top. Bake for additional 25-35 minutes or until cheeses are melted and casserole is heated through & bubbly.
