Directions:
Make Alfredo sauce:
In a medium saucepan over medium heat, melt 1/2 cup butter and add minced garlic, if using and sauté for 5 minutes. Otherwise add cream cheese and half and half and stir until cream cheese is melted and well blended. Add Parmesan cheese and garlic powder and simmer about 5 minutes until thickened. Salt & pepper to taste.
Cook noodles according to package and drain.
In a large skillet, melt 2 tablespoons butter. Sauté green pepper & onion. Remove from skillet & set aside. Combine eggs and 3/4 cup milk & add to skillet. Cook eggs over medium heat until set but still moist. Remove from heat.
Spread 1/2 cup Alfredo sauce in greased 9x13 inch baking dish. Layer with 4 noodles and then ham and onion & pepper mixture. Spread half of the remaining Alfredo sauce in pan. Put remaining 4 noodles over sauce. Then put the eggs over the noodles. Sprinkle cheddar cheese over top and cover with remaining Alfredo sauce. Sprinkle with 1/2 cup Parmesan cheese.
Bake, uncovered 350º for 45-50 minutes or until bubbly. Let stand 10 minutes before cutting
