Ingredients: 2.25 pounds Sirloin Tip Beef Roast 1 teaspoon salt, or to taste 1 teaspoon pepper, or to taste 1 cup water 2 large onions diced Garlic Powder to taste 6 carrots, peeled and sliced 4-6 Butter Gold potatoes, or potato of choice, quartered or cubed 1-2 tablespoons fresh chopped parsley, optional Gravy: Broth from the beef roast 1 cup water 3 tablespoons unbleached or all-purpose flour 1 teaspoon beef bouillon, or salt to taste

Directions:Preheat oven to 325º F. Sprinkle 1 teaspoon each salt and pepper and garlic powder evenly on all sides of the roast. In a dutch oven, or large pot, heat 2 tablespoons olive oil over high heat. Add the roast and reduce heat to medium-high. Brown both sides of the roast 5-7 minutes, or until dark brown, but not burnt. Pour 1 cup water into the dutch oven, cover and cook in a preheated oven for one hour. Add 6 peeled and sliced carrots, onions and 4-6 quartered or cubed potatoes. Cook an additional hour, or until the vegetables and roast are fork tender. Remove from pot, cover and let rest 10-15 minutes on a cutting board. Then slice the roast against the grain with an electric knife or a very sharp knife. Gravy: Mix 1 cup water and 3 tablespoons flour together, heat the broth from the roast to a boil over high heat and add the flour-water mixture. Continue to cook over high heat, stirring briskly with a whisk until the gravy is smooth and thickened. Season to taste with a teaspoon of beef bouillon paste or salt and serve over the beef pot roast. |

Notes: Cook time is 2 hours and I do mine in a crock pot all day. I also like Lipton's Onion Soup mix, you sprinkle it over the pot roast and then add the water and it is a great overall seasoning. If you have eaten my pot roast you had it with Lipton's. Also the Gold potatoes are a must and also what I choose when I make mashed potatoes. They are richer and have a more buttery taste.
