1/4 cup Raspberry Vinegar or White wine Vinegar
2 tbsp salad Oil
1 tbsp Honey
1/2 tsp Freshly shredded orange peel
1/4 tsp Pepper
1/8 tsp Salt

Directions:
Directions:
Combine raspberry vinegar, salad oil, honey, orange peel, pepper and salt in a screw top jar. Seal and shake well. Chill dressing until needed.
 

Spinach Salad


Ingredients:

3 med Boneless, skinless chicken breasts
1/4 cup Orange juice
8-10 cups Torn fresh spinach
1 cup Fresh raspberries
2 med Pitted nectarines or peaches

Directions:
Directions:
Cut chicken into 2 inch strips. In a microwave-safe 2 quart casserole, combine chicken, 1/4 cup water and orange juice. Microcook covered on high for 4-6 minutes or until chicken is and no longer pink. Drain, discarding the cooking liquid. Cool chicken slightly. In a large bowl, combine warm chicken and spinach. Add dressing and raspberries, toss gently. Divide salad mixture among plates and top each salad with peach or nectarine slices, arranging them in a fan. Serve immediately. Makes 4 main dish salads.
Can vary fruit-adding blueberries or strawberries instead of raspberries.
